Duties
The purpose of this position is to manage all food and beverage operations of the Moody Field Club. Using culinary skills, performs as a working chef in the day-to-day operations, to include food and beverage management, operations of the kitchen and all aspects of meal preparations, supervising employees, quality control, quantity and timeliness of service rendered to patrons.
Establishes procedures, lead time on orders and portion controls, makes adjustments as necessary to increase efficiency. Ensures and instructs employees on proper cooking techniques for preparing a variety of food items in the art of fine culinary cuisine. Checks food during and after preparation for the conformance with high standards of quality, cooking size and portions and garnishing of food. Ensures that all kitchens provide nutritious safe, eye appealing, properly flavored food, proper food storage, handling, thawing, cooking, and presentation procedures as followed. Initiates the preparation and development of new and unusual food items, specialty food and sauces.
Creates and plans new culinary menu items and recipes to support the interest of customers. Plans and develops all menus for regular meals, fine dining and parties. Formulates cyclic specials and menus for use in all food areas to ensure customer satisfaction. Adjusts menu to product availability, and to accommodate various cultural restrictions, holiday, or special events. Oversees and assists cooks in preparing menu items using special or difficult recipes involving many steps, ingredients or long preparation time, including a variety of meats, poultry, seafood, vegetables, sauces and gravies. On a daily basis, ensures preparation of four or more menu items for each meal, planning an?? coordinating steps with staff to ensure that all items are ready for serving at the same time. Ensures that all equipment is properly maintained and in good working order. Ensures that employees follow security, safety, sanitation and housekeeping rules. Conducts walk through safety, food storage and sanitation inspections taking any necessary actions: meets all sanitation and environmental requirements. Performs daily sanitation checks and delivery inspections. Responsible for all aspects of work force management: recruitment, establishes work schedules, assigns work to subordinates: approves/disapproves leave request, maintains discipline, training, employee performance evaluations, resolves conflicts. Utilizes and maintains Food Trak program for control of all food items including purchases, inventory, food costs, menu cost cards, and reports.
Responsible for security and accuracy of inventories of supplies and foods. Identifies new equipment needed, determines equipment replacement schedules, budgets for replacement. Assess food services related financial data and recommends actions to increase efficiency and maintain financial solvency. Submits purchases, transfers, inventories, and other paperwork as required to the NAF Accounting Office. Directs club operations in the absence of the club manager. Performs other related duties as assigned.

In order to qualify, you must meet the experience requirements described below. Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social). Qualifying Experience:
Must have progressively responsible experience in quantity cooking, preparation of a variety of food items, menu planning, quality of food preparation, and storage procedures for food supplies and equipment. In addition, the incumbent must have knowledge of dietetics, planning culinary activities and portion control. Must have the ability to plan culinary activities to meet meal schedules. Must have specialized training and experience which involved planning, preparing and service food in mass quantities for large groups of people. Knowledge of etiquette and military protocol desirable. Must be able to continually stand and walk, frequent stooping, reaching, pulling, pushing and bending. Frequently lifts and moves objects weighing up to 40 pounds unassisted, and occasionally lifts or moves objects weighing over 40 pounds with assistance. Must be able to satisfactorily complete a pre-employment physical and obtain a Food Handler's Certification and/or complete food handler training. Must be able to work days, nights, weekends and holidays. Must be able to read, write and speak English. Must be able to satisfactorily complete a National Agency Check with Inquiries (NACI)
