Duties

1. Prepares the main dish from assigned recipe. May include roasting, broiling, baking, frying, boiling, steaming, or stewing.
2. Prepares all vegetables and gravies, rice and pasta as well as other foods on the daily menu, IAW USDA approved recipes.. Responsible for preparing from recipes
all desserts, breads, and dressings.
3. Checks on all foods and product as they are being cooked.
4. Places the meal component(s) in the appropriate storage (warmer or refrigerator) after preparation. Places food on the serving line and ready line storage systems.
5. Scrubs pans, cleans area thoroughly, and stores equipment when finished.
6. Assists with the serving of breakfast and lunch, or running the point of sale cash registers.
7. Assists with the cleaning of the kitchen and helping put stock away.
8. Takes an inventory to ensure the necessary foods are available for the next day and records ingredient usage, new case openings, and menu forecasting assistance.
9. Assists others in the kitchen when necessary and covers when team members are absent/late from work.
10. Follows, monitors, and records food preparation, issuance, and leftover distribution on Food Daily Production Reports and Logs. Submits daily reports to next higher level via electronic means.
11. Maintains a work leader authority over Food Service Workers and provides guidance, instruction, and feedback to supervisors on Cafeteria Operations.
12. Performs other related duties as assigned by Cafeteria Manager and Food Service Director.

EVALUATIONS:

Qualifications

Skill and Knowledge: Must have basic knowledge of food preparation principles. Must know how to schedule and coordinate food preparation to produce a properly cooked meal on time. Must have a basic knowledge of a variety of ingredients used in baked goods, eg. hard or soft flour, leavening agents, soda, butter or shortening, etc. Must be able to adjust ingredients in standard recipes when altering the number of servings required. Must be able to follow standardized recipes and cooking techniques. Must know or be able to quickly learn how to operate and clean kitchen machinery. Must have a current Food Sanitation Training Certificate and Health Card.
Experience: Experience cooking for large groups is preferred
PHYSICAL DEMANDS: Frequently lifts or moves utensils or containers weighing twenty pounds and occasionally up to fifty pounds. Work is performed while standing or walking
WORK ENVIRONMENT: Exposure to extreme temperatures due to steam and heat from cooking and cold from walk-in refrigerator/freezer. Working areas are often uncomfortable, warm and noisy. Exposure to minor cuts, bruises, burns and scalds. Danger of slipping on floors which are wet, or where food or beverages have been dropped. Injuries may result from use of powered equipment. Will be required to assist in food deliveries and heavy lifting of cased food (up to 50 lbs) into different climate controlled environments.
