Summary


About the position:

This position will be assigned to the Peterson East CDC located on Peterson Space Force Base.

This position may require shift work to provide coverage on evenings, weekends, holidays, or special situations.

Must be able to frequently lift objects weighing up to 40 pounds. Must be able to continuously stand and walk and frequently stoop, reach, push, pull, and bend for long periods of time.

Duties

Duties and Responsibilities:

  • Prepares menu items using special or difficult recipes involving many steps, ingredients, or long preparation time; or may do both.
  • Labels and dates all foods; ensures refrigerator temperatures are at or below 41 degrees Fahrenheit. Maintains freezer temperatures at or below zero degrees Fahrenheit.
  • Follows policies and procedures contained in the AF Instructional Guide on feeding Infants and Young Children.
  • Uses caring for our Children national Health and Safety Performance Standards and Child and Adult Care Food Program Feeding Infants. Plans and coordinates the preparation of meals based on master menus.
  • Reviews recipes, menus, and worksheets to determine ingredients needed and may meet with management to coordinate food orders, menu plans, infant feeding plans, and to determine substitutions for special diets if needed.
  • Prepares vegan, vegetarian, or religious substitutions that meet the USDA Child and Adult Food Program Guidelines. Prepares and provides ready to eat food items such as snacks. Purchase food through regular purchasing channels and of comparable costs (e.g., chicken instead of pork).! Contact AFSVC/SVPY if unable to provide substitutions. Ensures that substitutions meet the Child and Adult Care Food program guidelines and Public Health storage requirements.
  • Provides sanitation instructions to Food Service workers when cleaning dishes, utensils, appliances, kitchen equipment, and food preparation work surfaces. Uses the three-step method if a dishwasher is not available.
  • Posts and maintains list of the children with food allergies in the kitchen. Prepares various menu items for regular or modified diets for children with special needs (i.e., diabetes, allergies, or food sensitivities). Prepares meals for individual servings and for large quantities.
  • Purchases food from the Prime Vendor. Inspects food at delivery for spoilage, sanitation, or potentially hazardous conditions and returns unacceptable or unsafe food to vendor. In addition, incumbent, verifies quantity and annotates overages, shortages, and substitutions. Helps CDC/Youth Center management with food costs forecasts and purchases of serving bowls and utensils for determining the actual portion of food needed for each age group.
  • In addition to the Food Service and VLS modules trainings conducted by activity CY trainer, incumbent conducts on-the -Job cooking and food preparation training of kitchen staff.
  • Follows risk management procedures (i.e. abuse prevention, identification, and reporting procedures; accident prevention, etc.). Plans use of workers, equipment, and materials.
  • Establishes work sequences and plans work assignments based on general work schedules, methods and policies set by DoD and AF directives and management. Sets performance standards and makes formal and informal performance appraisal of subordinates.
  • Counsels' employees on problems, takes corrective actions on conduct or performance problems.
  • Requests disciplinary action when needed. Consults and works with management the recruitment of kitchen personnel, such as fill requests for kitchen vacancies and recommends selection of new employees from referral lists.
  • Initiate other personnel actions as required. Initiates recommendations for awards and approves/disapproves leave of subordinates based on workload programmed and circumstances involved and keeps management informed of leave approvals/disapprovals.
  • Ensures assignments are made consistent with the skill requirements of the different levels of subordinate positions. Observes work in progress to anticipate or resolve problems. Adjusts plans, assignments, and methods as necessary to accomplish the work as effectively and economically as feasible. Inspects quality of work and reports possible or actual work delays to supervisor.
  • Investigates work related problems such as delivery of services, excessive food costs, or low productivity and determines causes. Recommends solutions to staffing problems and consults with supervisor.
  • Within the overall schedule and consultation with supervisor, assigns schedules and tasks to be performed and provides technical direction.
  • Explains work requirements, methods and procedures, instructs subordinates on new procedures and provides advice when problems arise.
  • Ensures assignments are made consistent with skills requirements of different level of subordinate positions.

In order to qualify, you must meet the experience requirements described below. You will receive credit for all qualifying experience, including volunteer experience. Qualifying Experience:
  • Must have experience in and knowledge of food preparation principles and characteristics of food, and of planning processes to ensure entire meals are prepared and cooked on time.
  • Must be able to determine portion cost and to adjust ingredients in standardized recipes. Must have knowledge of procedure to order, issue and store food.
  • Experience and knowledge must have been gained in a Child or Youth kitchen program, grill, snack bar, restaurant, club, or similar food activity.
  • Experience performing food/kitchen equipment inventories and ordering/tracking food items using automated programs is highly desirable.
  • Must be physically able to frequently lift objects weighing up to 40 pounds, and occasionally over 40 pounds.
  • Must be able to continuously stand, walk, stoop, reach, push, pull, and bend for long periods of time.
  • Must be able to satisfactorily complete a pre-employment physical and have or obtain all required immunizations set forth by DOD AF for Child and Youth Program staff including annual Influenza vaccine.
  • Must be able to obtain a Food Handler's Certificate and/or complete food handler's training.
  • Must be able to satisfactorily complete a Tier 1 background investigation.
  • Must be able to complete CY Child Abuse related modules and all CY Food Service Training modules via virtual lab school courses within timeframe specified in AFI 34-144.
