About the position: This position will be assigned to the Mitchell Hall Cadet Dining, Air Force Academy, Colorado.

  • Complete 180 hours of internship over 15 weeks for spring and 10 weeks for summer.

Duties

  • Produces all food products using standardized recipes to support established menus and time schedules to meet daily facility requirements.
  • Prepares box lunches in support of athletics, airmanship and related cadet programs.
  • To provide food service for three meals per day: breakfast, lunch and dinner, to the cadet wing, customers, and children under the care of the Child Development and Youth programs.
  • Support special programs such as theme dinners, buffets, banquets, balls, outside catering, and nutritional and health programs.
  • Provides sanitary conditions of food service equipment and dining room before and after each meal is served.
  • Ensures compliance with the U.S. Department of Public Health Food Code.
  • Maintains hazard free environment in compliance with AFOSH.
  • Sets up cafeteria lines, food service counters, steam tables, dining room tables, and side service stands with hot and cold foods, including meats, vegetables, salads, desserts, bread, butter, beverages, glasses, silverware, and condiments.
  • Prepares fruits and vegetables for cooking and serving.
  • Cuts, shreds, slices, and dices fruits, vegetables, and produce for cooking and serving.
  • Tosses salads and prepares dressing according to recipes.
  • Makes cold sandwiches using prepared ingredients and packs box lunches.
  • Makes coffee, tea, and punches according to recipes.
  • Sets up water stations.
  • Properly prepares foods as instructed and within established time frames.
  • Clears, breaks down, and cleans assigned area.
  • Returns soiled dishes and trays.
  • Sets up and operates dishwashing machine including continuous conveyor belt type.
  • Scrapes, soaks, scours, and scrubs heavy cooking utensils.
  • Unloads food and beverages from delivery trucks.
  • Assists in unloading supply trucks and storing heavy supplies.
  • Moves heavy, filled garbage cans when collecting and transferring trash from work to disposal areas.
  • Utilizes safety and sanitation practices, rules, regulations, and procedures to maintain a safe and clean work environment.
  • Uses and assures proper fit of required equipment and clothing.
  • Safely uses and maintains tools and equipment.
  • Interns will be assigned to specific activities withing the Mitchell Hall, Golf Course, Falcon Club and Bowling Alley.
Working Conditions:
  • Work is performed in kitchen areas where the steam and heat from cooking and dishwashing equipment often cause uncomfortably high temperatures and humidity.
  • The work area is well lighted but usually noisy from food service activities, and there is danger of slipping on floors where food or beverages have been spilled.
  • Employee is regularly exposed to hot liquids, sharp cutting blades, hot working surfaces, and extreme temperature changes when entering walk-in refrigerators or freezers.

In order to qualify, you must meet the experience requirements described below. Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social). You will receive credit for all qualifying experience, including volunteer experience. Qualifying Experience:
  • Students must be current enrolled in accredited educational institution culinary program.
  • Knowledge of basic arithmetic in order to count number of tables/trays required, to determine number of servings a container will yield, and to count change when required to perform cashier duties.
  • Ability to learn knowledge of food service sanitation standards including procedures to prevent contamination, spoilage, and waste.
  • Ability to concentrate on work assignments despite interruptions and distractions.
  • Ability to do tasks with several steps and to follow established sequence of tasks without more than normal supervision.
  • Ability to learn to use and maintain food service tools and equipment such as knives, mechanical dishwasher, and powered cleaning equipment.
  • Ability to learn food service safety regulations, practices, and procedures.
  • Ability to read and understand simple signs, names of food items, and instructions.
  • Have an understanding of basic food handling techniques.
  • They have skill and knowledge to perform routine manual tasks involving few steps.
  • Have an understanding of personal hygiene standards and safe work procedures such as wearing a hairnet and a clean uniform daily, stacking dishes carefully to avoid mishaps, and wiping up spilled food or liquid promptly to prevent falls.
  • Have the knowledge to read and understand written material such as time and duty schedules, safety data sheets for hazardous chemicals, menus, recipes, and basic work instructions.
  • Have knowledge of basic arithmetic such as addition, subtraction, multiplication, division, fractions, and decimals.
  • Applicant must be able to stand, stoop, bend and walk for long periods of time.
  • Successful completion and favorable adjudication of applicable background investigation (Tier 1 level) is required.

Education
