Summary

Serves as a Supervisory Food Service Specialist in the Kitchen Dept. of the Hale Koa Hotel.

2024 Cost of Living Allowance for Honolulu, HI is 8.90%.

This position will remain open until filled with a first cutoff date of 7/22/2024 for employment consideration. Additional lists will be pulled after this first cut-off date at the request of the hiring manager.

Duties

Assists the Executive Chef in planning, developing, and managing all phases of food service programs in a facility with multiple food outlets where full service dining and catering are a regular and substantial basis of the total food operation. Provides the highest quality food production available from the food service and hospitality industry.

Creates special menus and supervises the preparation of meal which involve complex or new cooking methods. Balances nutritional values of menus prepared and ensures the quality of the total food service program.

Develop operating budget, identifying labor, equipment and supply costs elements. Controls food production using modern and up to date methods and techniques, ensuring maximum food safety at all times. Maintains all controllable expenses within budget. Ensures internal control by active daily involvement.

Supervises, directs subordinates and participates in all phases of food preparation. Performs other duties assigned.

Qualifications

Three years of general experience, of which one year is specialized experience. Such experience must have demonstrated:
Knowledge of all aspects of food preparation, food safety, sanitation and service; Knowledge of prices, dietetics, grades of food, and meal planning; Ability to plan culinary activities to meet meal schedules; Ability to supervise and train other personnel in preparing and serving food, as appropriate; and Ability to prepare pertinent records and reports
Managerial experience in one or more of the functions in a food operation, such as financial management, personnel management, food and beverage service.

Hight Qualifying Criteria:
Must have computer knowledge in Microsoft office.
