Job Description (Please follow all instructions carefully)

Summary

Plans, directs and supervises all phases of the food operation at Trilogy Recreation Facility at Naval Air Facility, Atsugi (NAFA). The scope of this position will include Parcheezi's Pizzeria. The incumbent will have direct supervision over all facility personnel such as cooks, shift supervisors, food service workers/dishwashers and is responsible for hiring and training of employees and motivation of these employees in all designated areas.

Duties

Program Management and Administration

  • Plans and implements overall facility strategy.
  • Plans restaurant offerings and daily restaurant specials.
  • Responsible on a day-to-day basis for internal controls and managing operational costs.
  • Responsible for procurement of goods and inventory.
  • Ensures sanitation and cleanliness of all areas, speed of service and food quality,
  • Ensures timely daily food preparation and for catered events.
  • Works daily with kitchen staff to ensure food quality is of the highest standards.
  • Meets all reporting deadlines for work assigned.
  • Interfaces with Clubs Manager in the planning of programs, menus and internal controls necessary for a viable and successful operation.
  • Cooks and instruct staff of proper procedures as needed.
  • Works with the Clubs Manager and shift supervisors to develop new product and prepares cost cards and menu cards for items to be added to menus.
  • Maintains proper up-keep of all equipment and fixtures and reports problems to Clubs Manager for repair.
  • The incumbent must be alert for possible trouble areas to avoid possible discontent among patrons and installation military command officials and continually must evaluate Trilogy menus and data to identify variations or conflicts.

  • Directs work to be accomplished by staff.
  • Assigns work based on priorities, difficulty and requirements of assignments, and staff capabilities.
  • Conducts annual performance reviews of staff.
  • Participates in section staffing decisions.
  • Ensures staff receives proper training to fulfill requirements of their positions.
  • Addresses potential disciplinary and/or performance issues timely and takes appropriate, corrective action(s) as necessary.

Conditions of Employment

  • Satisfactorily complete all background checks to include National Agency Check with Written Inquiries (NACI).
  • Incumbent must be able to work varied work schedules to include evenings, weekends, and holidays.
  • Must have or be able to obtain and maintain a valid driver’s license.
  • Must have or be able to obtain and maintain a valid Health Card.
  • Must be able to drive a manual transmission vehicle.
  • Must complete the following training within 60 days of being hired: Serve Safe Food Handler or equivalent Serve Safe Alcohol Server or equivalent. Credit Card / Cash Handling training
  • This position is not eligible for telework.

Qualifications

  • Knowledge of Department of Defense (DoD) and Navy club policies, regulations, administrative practices and procedures related to management, planning, budgeting, scheduling and coordinating club social and recreational programs.
  • Knowledge and skill in the application of a broad range of club management principles, concepts and methodology to a variety of activities and services of a medium size club where the programs and services offered are limited.
  • Knowledge of industry and Navy Food Sanitation Standards.
  • Skill in the use of Microsoft Office Programs (e.g., Word, Excel, Outlook, Lotus 1-2-3, Power Point).
  • Knowledge of Food Trak and MICROS Point of Sales System is preferred.
  • Knowledge of and skill in the efficient operation and use of assigned facilities and equipment.
  • Knowledge of the Recreation and Mess Central Accounting System (RAMCAS).
  • Knowledge of the slot machines and their operations and related instructions.
  • Ability to conduct an assessment of the size and mix of the combined club patron community, cost targets, club adequacy standards, and required changes or exceptions to club operational policies.
  • Ability to develop and effectively deliver presentations and/or training.
  • Knowledge of CNIC's EEO policy and procedures.
  • Ability to perform the full-range of supervisory duties.
  • Ability to communicate effectively both orally and in writing.

  • Experience in the following: Food & Beverage, Point of Sale System, Special Event Planning, Creating Marketing Materials & Promotions, Schedule Coordination, Preparing Contracts, and Costing & Pricing out food.
